if the start up menu sees the drive, then the problem is that your G4 powerbook does NOT support large drive capacities greater than 128GB. Do you have the original hard drive which came with that? Use that as a test to prove my theory. Powermac G4's and powerbooks before I think 2003 don't support large drive 48-bit LBA, so this could be the problem. In this case, you will need intech's hi-cap tool in order to format and use the drive.
I noticed your install disks have 10.1.4 - THIS IS PUMA and I believe your powerbook precedes those powerbooks which have large drive support.
